Your account becomes read-only until you choose a plan. Nothing is deleted: your projects, pins and comments all stay, and your team can still see them. You just can't add new projects or pins.
Yes, from Dashboard → Plan & billing. You keep your plan until the end of the period you've paid for. If you change your mind within 7 days of your first payment, we refund it in full.
